Seared beef with creamed horseradish, rocket and potato salad

Made this yesterday for lunch as my parents came over for a visit. It’s that kind of dish – something you can whip up quickly but is interesting enough to serve up for guests. I place it all on a big platter so everyone can serve themselves. It’s based on a Jamie Oliver recipe – but he uses roasted baby beetroot and watercress instead of potatoes and rocket.

Serves 6 – 8
olive oil
1.5kg fillet of beef
10 new potatoes
100g freshly grated or creamed horseradish
200g creme fraiche
juice of 1 lemon
100g shaved parmesan cheese

Heat oil til super hot in a pan. Season beef with salt and pepper. Sear beef on all sides in pan for 5 minutes. This will leave it quite rare. Cook for longer if you like it better done. Let the beef rest for at least 5 minutes.
Cook potatoes til tender in salted boiling water. Mix creme fraiche and horseradish, along with a splash of lemon juice. Dress the rocket with olive oil and lemon juice. Slice beef and place over rocket, along with potatoes. Drizzle with horseradish dressing and scatter with parmesan. If you want to up the veggie content, add some cooked asparagus or snow peas.

    why would anyone add veggies….????more meat i say!
