10 Minute Mid-Week Meal – Basil and Fetta Chicken

I’ve been to a number of recipe shower teas for friends getting married where I had to bring my favourite recipe. And I always bring this one. It’s a family favourite. For my cousin’s recent recipe shower, my mum, my sister and I all supplied the same recipe – this one. It’s dead easy but also interesting enough to serve to guests as a last minute casual dinner party.

Serves 4
Ingredients
8 chicken thighs
1/4 cup lemon juice
1/4 cup olive oil
150gms fetta cheese, crumbled.
1 cup of chopped basil

Mix together oil and lemon juice. Poor over chicken thighs in a glass or ceramic dish. Sprinkly basil and fetta over top. Bake with lid on for half an hour at 180 degrees celsius. Serve with rice, and steamed greens or a salad.
